The Butcher’s Cellar – the sophisticated new restaurant highlighting an array of crave-worthy small plates, succulent seafood dishes, and a one-of-a-kind take on classic steakhouse offerings featuring only the highest quality beef in Waco, Texas – is pleased to announce the launch of Happy Hour.

Available Monday through Saturday from 4:30PM – 5:30PM, patrons can unwind and indulge in a selection of $4 off specialty and house cocktails, glasses of wine, select appetizers, and $3.50 off beers. Appetizers include 1000 Layer Potato with crème fraîche, trout roe and chives; Spicy Tuna Crispy Rice with tuna tartare, spicy mayo, pickled serrano and chives; BC Onion Rings with fancy sauce; Lobster Taco with crispy wonton, pickled daikon, spicy mayo, and puffed mustard seed; Oysters tangerine mignonette herb oil, and pickled Fresno chile; and Baby Gem Salad with bread crumb, pickled onion, parmesan, and Calabrian chili Caesar dressing. Like the heralded a la carte menu, the Happy Hour creations are the work of Executive Chef Alejandro Najar and Chef de Cuisine Alyssa Osinga.

Creative libations from Head Bartender Ali Lindsey include The Lyss (Hard Truth Toasted Coconut Rum, Plantation Isle Fiji Rum, lime juice, pineapple juice, and Turbo); Carajillo (Licor 43, Plantation Rum, Bailey’s, and espresso); Summer Fling (Greenhouse Gin, Solerno Blood Orange, simple syrup, and prosecco); Purple Reign with Greenhouse Gin, Empress Gin, crème de violette, honey syrup, lemon juice, and tonic); Honey Basil Lemonade (basil lemon vodka, Limoncello, lemon juice, honey syrup, and soda); New York Sour (Sazerac Rye, simple syrup, lemon juice, egg white, and red wine); Spicy Strawberry Margarita (Lalo Tequila, Cointreau, lime juice, agave, strawberries, and jalapeno); The Filthy Al (Chopin vodka, olive juice, and olives) and classics such as a Manhattan (Makers Mark 46, sweet vermouth, and orange bitters) and Old Fashioned (Bulleit Bourbon, simple syrup, and bitters).
